The alchemy of assemblies

Just before bottling, the work of the " Cellar Master " consists of determinating which armagnacs will enter this or that assembly.
At the Château de Cassaigne, this work is usally done by two or more persons, in order to share the different opinions and to arrive to a consensus on the quality of the products.
Vintages are not assembled, which therefore allows the production year to appear on the bottle.
