The ageing

The eau-de-vie, taken out of the still, is immediately put in 400 to 420 liter oak casks called " pieces ".
The ageing in the oak allows the eaux-de-vie to become finer and richer, following several complex reactions.

In order to guarantee an irreproachable quality, the Château’eaux-de-vie are lodged for a year in new casks. Then, the Armagnac is tranferred to older " pieces " where it will, very patiently, continue its ageing.
All along this ageing process the alcohol content reduces by evaporation. The Gascons, poets in heart, have for long given a name to this natural phenomenon. They call it " the angel’s share ".
